Rice verde one-pot

Rice verde one-pot

ingredients
50g/2oz butter
1 small onion, finely chopped
200g/7oz cold cooked long-grain rice
275g/10oz spinach, chopped
225ml/8fl oz milk
1 egg, lightly beaten
1⁄2 teaspoon salt
225g/8oz Cheddar cheese, grated

• Preheat the oven to 180°C/
350°F/Gas mark 4.
• Melt the butter in a large casserole
dish and sauté the onion until it is
transparent. Stir in the rice,
spinach, milk, egg, salt and
cheese. Mix well with a fork.
• Cover and bake for about
30 minutes, until the mixture is hot and the top is crisp.
serves 3
