One-pot sausage jambalaya

ingredients
2 Italian sausages,
coarsely chopped
500g/1lb 2oz canned chopped plum tomatoes
200g/7oz long-grain rice
1 teaspoon dried basil
1 red pepper, seeded and chopped

• In large wide non-stick saucepan
over a medium-high heat, brown the sausages for 8 minutes, then drain off any fat.
• Add the tomatoes, then stir in
550ml/18fl oz water, the rice and
the basil.
• Cover and bring to the boil, then
reduce the heat to low and simmer
for 20 minutes, stirring once. Stir in
the pepper, cover, and simmer for 5 minutes. Serve hot.
serves 4
