Chicken broccoli casserole

ingredients
500g/1lb 2oz broccoli florets
500g/1lb 2oz cooked chicken, cubed
275g/10oz canned condensed chicken soup
125ml/4fl oz mayonnaise
100g/4oz Parmesan cheese, freshly grated
1⁄2 teaspoon curry powder
100g/4oz fresh bread, cubed
25g/1oz butter, melted

• Preheat the oven to 180°C/
350°F/Gas mark 4. Lightly grease a large baking dish with a little vegetable oil.
• Cook the broccoli in water in a
covered saucepan until al tender
but still with a bite, then drain.
• Put the broccoli in the prepared
baking dish.
• Combine the chicken, soup,
mayonnaise, cheese and curry
powder, then spoon over the
broccoli. Top with the bread and butter. Bake in the oven,
uncovered, for 25-30 minutes until heated through. Serve hot.
